Salmon Piri-Piri From The Healthy Heart

This dish came about when I had five minutes in which to get dinner in the oven. I found an unopened bottle of piri-piri seasoning which I had bought while browsing around my supermarket’s spice section. If you want a very quick way to ring the changes with a salmon fillet, give the spice jar a shake and you’re done. The result is quite hot so go sparingly if you are on the mild side. A shake or two extra for those who like to walk on the wild side.

For 4 people:

4 salmon fillets or 1 large fillet
Bottle of piri-piri seasoning

Heat oven to 200C/400F. Lay the fish fillets on an oven tray and season with piri-piri. Bake for 15-20 minutes depending on the thickness of the fish. Serve with lemon wedges to squeeze over. The lemon juice not only adds a zing but also cools the chilli a little.

Serve with boiled new potatoes and some green vegetables.
